Born in Minsk, Belarus, Fiodar arrived in Canada at the age of 18 and discovered a world of flavors. Cooking quickly became a way for him to explore cultures and connect with people.
He has developed a style all his own: bold, vibrant, and free from convention. He masters classic French and Italian techniques, but doesn't hesitate to flirt with South American and Asian influences. In 2020, he became R&D chef at Pizzeria NO.900, where he added his creative touch to the menu and also participated in several major international competitions, including a 1st place in the Neapolitan category in Atlantic City and a 3rd place in traditional American pizza in Las Vegas.
At the helm of Locali, Fio brings all his expertise (and personality) to bear on a menu inspired by Italian classics. For months, in his garage, he tested, tasted, and adjusted until he found the perfect balance between tradition and creativity. The result: a generous, modern menu that delivers a wealth of flavors in every bite.
Gabrielle Hamelin is a key figure at Groupe NO.900, where she currently serves as Marketing Director. Her passion for the restaurant industry began at the age of 15, when she landed her very first restaurant job.
At 27, she became the owner of four NO.900 pizzerias. She worked in all positions, even taking over the kitchen when a chef left mid-opening, armed with her AVPN certification. In 2018, she sold some of her restaurants and joined the group's headquarters as an interior designer. Two years later, she made a decisive shift towards marketing. She was alone at the helm during the pandemic, leading the relaunch campaigns and helping the company emerge stronger than ever.
Today, she leads the marketing team and co-owns four NO.900 locations, in addition to her new project: Locali. A passionate entrepreneur, she also co-owns a mobile catering service with her work and life partner, Fiodar Huminski. Together, they travel to festivals across Quebec, sometimes making more than 1,000 pizzas a day.
Alex opened his first restaurant at 22, sold a frozen pizza business at 38, and then founded one of the best Neapolitan pizzeria chains in the world. He's a passionate entrepreneur like few others.
Trained in marketing, he spent several years exploring the restaurant world before launching Pizzeria NO.900, with a clear idea in mind: to restore the pizzaiolo profession to its former glory. Today, the brand has more than thirty restaurants in Quebec, as well as branches in Toronto and France.
Locali is a project he's long cherished. Surrounding himself with a team of passionate people, he now offers a new experience: cuisine inspired by Italian classics, cooked with the finest local ingredients, at an affordable price, without compromise.
A longtime friend of Alexandre Brunet, Mélanie was involved in the NO.900 adventure from the very beginning, opening the very first—and now legendary—restaurant on Bernard Street in Outremont. For more than ten years, she ran it with passion and rigor, becoming a key figure for both regulars and the brand.
Today, in her native Rosemont, she takes on a new challenge by taking the reins of Locali. After helping to propel NO.900, she intends to make Locali shine with the same energy. With Mélanie on board, the story is only just beginning.
